Who doesn't love anything with cheese and broccoli? Who doesn't love the fact that it can be healthy!? This is a 21 Day Fix approved meal that is not only quick, but it is also simple to make! I'm finding that I am putting the Southwest Seasoning on everything now and I have no shame for it!
Ingredients:
Chicken Breast
Broccoli
Southwest Seasoning (in 21 Day Fix book)
Cheddar Cheese
Directions:
Chop
broccoli up. Cut the chicken breast in half and pound it out so it is
more flat. Use the Southwest season to spice up your chicken. Add your
broccoli and then put the cheese on top. Make sure you leave space to
roll it up. Place the rolled side down to hold the contents in and place
it in a sprayed baking dish. Season the top with the Southwest Mix
again. Bake at 350 degrees for 30-35 minutes. Depending on how thick
your chicken is, it may take longer. Just make sure the chicken is
cooked!
** I have also substituted asparagus and Parmesan cheese which was also delicious!
