Creamy Garlic Cauliflower


There are days that I just crave Fettuccine Alfredo and this garlic white sauce over rice just does the trick for me! Is it exactly like Olive Garden, no! BUT, it does the trick for me. I have made this a few times and each time I change the amount of broth and water added to the ninja to mix it together. I have found that the more that I add, the more I like it because I'd rather have a creamy sauce!


What you'll need:

6 cups cauliflower
6 scoops of garlic
4 cups chicken broth
1 1/2 cups brown rice
1 tsp salt
2 TBS coconut oil
1/2 cup milk
1/2 cup cheese


How to make it:

Cook rice.


While the rice is cooking: bring the chicken broth and water to a boil.
Add cauliflower and boil for 10 minutes or until tender.
Use a food processor to break down the cauliflower (I used my ninja). When I did this, I took it in little sections (make sure you bring the water/broth mixture with it. As you are blending it, add milk and/or extra broth to make it creamy.
Once this is to the texture you want it, dump on rice. :)



In a skillet, melt the coconut oil and mix in garlic. (If I'm pushed for time, I will use pre-chopped garlic and melt the oil in the microwave.)
Add the rice mix and sprinkle cheese over it until it is melted.
Add salt and pepper to taste.
