Healthy Crustless Broccoli and Cheese Quiche
Ingredients:
16oz Cottage Cheese, lowfat, 1% milkfat
1 package (10 oz) Broccoli, frozen, chopped, unprepared, thawed, well drained
3/4 cup, shredded Cheese, cheddar
4 medium Egg, raw, beaten
3 TBSP Parmesan Cheese, grated
3oz Bread crumbs, dry, grated, plain (Planko or homemade)
3/4 Cup Roasted Red Peppers, ready-to-serve, all averages , well drained, chopped
Directions:
1. Mix all the ingredients until well blended. Pour into a 9-inch pie plate sprayed with cooking spray.
2. Bake the quiche at 350°F for 45 minutes or until center is set.
3. Let stand for 10 minutes before cutting into slices to serve.
You could also add in turkey sausage or any other vegetable you want!
