Today I had a snow/ice day off from school. As much as I love having a day to "catch up" on my life, I will not be this happy in June. I spent my morning doing laundry, cleaning, and making this delicious breakfast as a brunch! :)
What you'll need:
4 Eggs (I used one full egg and 3 egg whites)
Brocolli
Cheese
Pepper
Coconut Oil Spray
How to make this SIMPLE brunch:
Start out by mixing your eggs in a small glass. I usually add a few drops of water in my glass to add some extra air for when I mix them up. Spray your pan and then add your mixed eggs into it. I added a little bit of pepper now so it will cook into my eggs, but I will add more later for flavor!
I added my broccoli to the pan. I used my 21 Day Fix containers to measure out my broccoli so I could easily keep track of it.

also added half a blue container of cheddar cheese to help make
everything stick. Sometimes I skip the cheese and sometimes I use the
whole container. It all depends on what I'm eating the rest of the day.
Let the eggs cook!Keep fluffing them as they cook. The more air you get in them, the better it will taste!
Cook the eggs until they are fully cooked and by then your broccoli will be warmed up!
I added some hot sauce to my eggs after they were done. As you can see this makes A TON of eggs. I'm definitely not hungry after eating this filling brunch!
