Ingredients:
- 2 cups cooked quinoa
- 2 eggs
- 1/2 cup minced onion
- 1 1/2 cups Mozzarella
- 2 tsp minced garlic
- 1/2 cup basil
- 1 package of small pepperoni bites
- 1 tsp dired oregano
- Pizza sauce (dipping only)
Directions:
Cook your quinoa according the package directions. Once it is done cooking, add all ingredients, but the pizza sauce in a medium bowl. Stir together until everything is mixed well. Spray a muffin tin, and evenly distribute the mixture into the tin. Cook at 350 degrees for about 20 minutes.
Remove from the oven and cut around each muffin so they won't stick. Once they are cooled, remove them from the pan. Serve each pizza muffin with a little bit of pizza sauce.
