This is a quick and easy summer dish that I love to make! My phone is acting funny and not uploading pictures so the pictures will appear soon!
What you'll need:
3-4 Chicken breast cubed for quicker cooking
8oz pasta (half a box)
1 cup loose leaf parsley (fresh and not chopped)
1 cup cherry/grape tomatoes
1 clove garlic
3 tbs EVOO
1 Lemon (juiced)
salt/pepper to taste
grated parmesan cheese (optional but delicious)
What to do:
Cook your pasta according to the box directions. While that's cooking, in your pan, drizzle the EVOO and toss in your chicken to cook.
While the chicken is cooking, cut your cherry tomatoes in half. Once the chicken is fully cooked, add the tomatoes and the parsley and put it on low heat. Be sure to stir it on occasion so it doesn't burn.
To make your dressing for your chicken. You'll want to mix 2 tbs of EVOO and the juice of a lemon (I got my juicer from Walmart) in a small dish. Add a clover of garlic (I get the already prepared garlic in the jar) and sea salt and pepper to taste. Whisk it together.
Add the pasta to the chicken pan and then dump the dressing over everything. Mix up and serve topped with Parmesan cheese (optional).
