Taco Bowls

I love tacos, but to be completely honest, I could probably eat about 5 if I have them in a shell. PLUS, a good majority of the shells are LOADED with corn and that just doesn't work for my body.

As much as I love tacos, I have made a quick and easy taco bowl that makes me feel like I'm eating something fancy from Chipotle or a super fancy Taco Bell! 💙

What You'll Need:
Coconut Oil
Brown Rice
Ground Beef or Ground Turkey
1/2 T Chili Powder
1/4 tsp Garlic Powder
1/4 tsp Oregano
1/2 tsp Paprika
1 1/2 tsp Cumin
1 tsp Black Pepper
Cheese
**Other Taco like toppings**


Melt a teaspoon of coconut oil in a skillet to brown your ground beef or ground turkey. I mix it up between coconut oil and EVOO from time to time, but I feel like coconut oil keeps it from sticking better.

Once you have your meat browned, add your spices directly to the pan. I add 1/2 tablespoon chili powder, 1/4 teaspoon garlic powder and oregano, 1/2 teaspoon of paprika, 1 and a half teaspoons of cumin, and a teaspoon of black pepper. If needed, I'll add like a 1/4 cup of water to mix everything together to make a taco mixture. *If I'm looking for more spice, I will add some crushed red pepper and/or some Spicy Mrs. Dash!

In a bowl, add your cooked brown rice. Add your taco mixture. Top with cheese and anything you would want to add to your bowl! I, personally, like cheese, olives, salsa, and tomatoes. On occasion, I'll add a smidge of greek yogurt or yogurt Ranch for an additional flavor.
