Veggie Egg Cups

I LOVE eggs for breakfast, but I don't always have the energy to make them every morning. Yes, I have an egg cooker so it is crazy simple, but sometimes, I just need some grab and go food.

What you'll need:
-- a dozen eggs
-- salt & pepper
-- 1 cup of chopped mushrooms
-- 3/4 cup of mixed bell peppers (cut into small pieces)
-- 1/8 cup onions (cut into small pieces)
-- Hot Sauce (optional)
-- Cheese (optional)
-- Clean salsa

What to do:
1. Preheat your oven to 375 degrees and spray a muffin tin with nonstick cooking spray (I use coconut oil).

2. Crack eggs into a large bowl to mix them together. Use a fork and mix them up. Add salt and pepper to taste. *Mix in hot sauce and cheese if you want now*

3. In the muffin tins, evenly disburse the veggies into the tins.

4. Cover with the eggs.

5. Bake 18 - 20 minutes until the eggs are fully cooked. -- I poke something in them to see if it comes out clean*

6. Top each egg cup with some clean salsa and enjoy!

**2 egg cups are a serving!
