I had a Hello Fresh meal was AH-MAZING! I seriously loved it so much, that I re-made it, but with my own little twists.
What you'll need:
- 1 onion
- 2 cloves of garlic
- 4 oz of grape tomatoes
- small handful of thyme
- 1 TBSP of Tomato Paste
- 6 oz of ground hot sausage
- 6 oz of orzo
- 1/8 cup vegetable broth
- 1/2 cup of mozzarella cheese
- 1/4 cup of parmesan cheese
- 5 oz spinach
- 2 tsp EVOO
- a stevia packet
- salt & pepper to taste
How to make it:
While that is cooking, bring 2½ cups water to a boil in a large pot. Once it boils, add the vegetable oil and the orzo to cook.
Also, halve tomatoes lengthwise drizzle them with olive oil, salt, and pepper and place them face down on a baking sheet. Roast these in the oven for 10 minutes or until they begin to burst.
Once the onion is cooked and garlic is fragrant, add the thyme, tomato paste, stevia, and sausage. Break up meat into pieces with a spatula. Cook until the sausage is just starting to brown which is about 4-5 minutes.
Meanwhile, add the cooked orzo to pot with sausage mixture and stir to combine. Add the mozzarella, tomatoes, and half the Parmesan into pot. Lay spinach on top and mix it until it has cooked down to your liking.
Divide between bowls and sprinkle with remaining Parmesan and then enjoy! SOOOO simple. Takes maybe 30 minutes and it's done!
