Salmon Muffin Melts

Salmon and Tuna Melts are my go-to quick meal that I can make and clean up while they are baking. I can also get a few other things done like my vacuuming and dusting while I wait! :) I love working up an appetite before eating. It makes me feel like I already started to work the food off somewhat.

1-2 packets of salmon
2-3 tsp olive oil mayo
1 tsp parsley
1/2 tsp salt
1/4 tsp celery seed
Tomato
Cheese (sprinkled on top)
4 English Muffins

Mix together salmon, mayo, and dry ingredients. Cut English Muffins in half. Take a slice of tomato and place one on top of each side of the muffin. Spoon the mixture on top of the tomato and then just sprinkle with cheese. Place in oven at 350 until cheese is melted and muffins are toasted (around 15 minutes)!

Alternatives:
**I like the packets because you don't have to drain them-- you can use drained cans too.
**You can skip the tomato.
**You can use tuna instead of salmon.
