In case you haven't noticed, I'm in a HUGE zucchini kick! I usually am around this time of year. If you haven't ever tried zucchini, you are missing out!!! So simple to make, and sooo delicious, yet healthy!! This recipe is basically just rice and a veggie but with a little extra zest with the ricotta... If you haven't tried it, ricotta makes a nice "sauce" for on your pasta too. I had some extra zucchini so this was my mixture for tonight!
Ingredients:
Brown Rice
1/2 cup ricotta
zucchini
thyme
garlic
salt
pepper
Super Easy Directions: Cook
the rice fully. While the rice is cooking, clean and cut up your zucchini and squash and sauté
them in garlic with the thyme (I used coconut oil). Allow time to cool. (If you are as impatient as I am, I put mine in the fridge)... Finally, just toss everything in the ricotta! Simple, right!?
