Zucchini and Tomato Dish

This is a super quick prep and a super delicious side! Disclosure: I ate mine as a full meal! My mom used to make what we called "Doody delight" a recipe that was handed to her from her best friend that her grandma would make. This honestly reminded me of that exact dish minus all the carbs from the pasta. I will be making a squash from my parents garden for dinner and using that as my pasta and topping it with this mix!  My dad sent me back to my apartment last weekend with zucchini and squash and I'm finally using it! LOVE IT!


Ingredients:
zucchini (cubed)
tomatoes (cubed)
garlic
Basil
Thyme
Oregano
a little salt
pepper
Parmesan cheese

Directions:  Preheat your oven to 350 degrees! While it is heating, spray a cooking dish, I used my temptations that I love!!!! With temptations, you really don't have to spray them, but I did anyways! Wash your zucchini and tomatoes. I used a bunch of small tomatoes because I didn't have any cherry ones. Cube up your zucchini and tomatoes. (If you watch cooking shows you will know the two lid trick --> place your tomatoes between two lids and slide between the lids... the tomatoes don't move and that don't smash!). Place them in a bowl to mix everything together. I salted my tomatoes before I put them in the bowl because I like a little salt, but I didn't want everything salted. Then I took so from Basil and Thyme and chopped it up and tossed it in. I didn't have fresh Oregano so I just sprinkled some from a container into my bowl. Toss a handful of Parmesan cheese and add a little pepper and mix together until everything is coated. Dump the mixture into the cooking dish and bake for about 30 minutes... I left mine in for around 33 minutes only because I like my zucchini soft! I had a small bowl straight out of the oven! I plan on using the rest tonight for dinner over some spaghetti squash!
