Pumpkin Snicker-doodle Cookies

Well I think I found my new guilty pleasure! I have a serious soft spot in my heart for cookies. Anyone who knows me will tell you this is a fact! The only downfall... it is hard to find cookies that you can not feel terrible about eating.


Ingredients: 
2 cups almond flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon baking soda
1 scoop protein powder

1/2 cup pumpkin puree
3 tablespoons coconut oil (melted)
3ish tablespoons of honey
1 teaspoon of vanilla

2 tablespoons of sugar
1 teaspoon of cinnamon

What to do:
Preheat your oven to 350.
In a medium bowl, whisk together your dry ingredients (flour, protein powder, cinnamon, salt, and baking soda). I used a Snicker-doodle protein powder which made these cookies extra delicious. You can leave it out if you wanted.

In a smaller bowl, mix together all of your wet ingredients (pumpkin, coconut oil, honey, and vanilla. Watch your coconut oil. You don't want it to harden before it is all mixed or you will have chunks in your cookies.
Mix your wet ingredients into your dry and stir. It will mix fairly quickly. 

Mix your sugar and cinnamon in a small bowl to roll around your cookies. 

Spoon up some of the mixture and form a small ball. Roll your ball in the cinnamon/sugar mixture. Coat and place them on a baking sheet. Once you have them all on the sheet, lightly push them down so they are in a cookie shape rather than little balls.
Place in the oven for about 10 minutes. Watch the bottom of the cookies! You don't want your sugar to burn to your sheet.
