Zucchini Sausage Casserole

So I almost always crave zucchini rather it is in season or isn't, don't ask me why. I just LOVE it! When I was doing the Whole 30, I found myself going to turkey sausage a lot because it wasn't as fatty as regular, but it still had that delicious sausage taste that I loved! So, I figured why not attempt to make a casserole! It will either be the BEST thing I've ever made or it will be a HUGE failure. Luckily, it was a great dish. I kind of made it like a quiche, but light on the egg!




What I used:
A package of turkey sausage
1 medium-large zucchini
Egg whites
Pepper
Parmesean Cheese
Planko breadcrumbs 


First things first, Preheat your oven to 375. I started by defrosting and cooking my turkey sausage in a skillet on the stove.




While the sausage was cooking I shredded a zucchini so I had about 4 cups of zucchini. I roughly measured it out.





Then I mixed the cooked sausage and the zucchini in a mixing bowl. I added 3/4 cup of egg whites (I usually get the carton of egg whites from the store because I'm not coordinated enough to separate the whites and the yolks). You could use the full egg (I would probably do 2 eggs), but I was keeping this a clean recipe. I tossed in 2 pinches of Parmesan cheese and sprinkled in some pepper. Mixed this all together.




I dumped all of this into a sprayed temptation dish that I have (once again, you really don't have to spray these dishes, but I just do for I fear everything will burn--- I'm still learning here, guys!)
Once I had everything in the temptation, I took a small handful of Planko breadcrumbs and mixed it with a small handful of Parmesan cheese! I then sprinkled this all over the top!




Cover and put it in the oven at 375 degree for 30 minutes. After 30 minutes, I took off the cover to let the top brown.




You can either serve straight out of the oven or let it cool... Enjoy! :)
