Delicious Marinara.. and Simple Too

So you know me and my love for everything made from scratch. I love that I know I won't feel horrible after eating it and I love that I'm eating clean too!


What you're going to want to have:
  • 1 TBSP EVOO
  • 1 small onion diced up
  • 6 cloves garlic
  • 1 can whole tomatoes (look for no salt) --large can
  • 1 can diced tomatoes (again, no salt) -- small can
  • 1 can tomato paste (optional)
  • 1 and 1/2 tbsp. basil
  • 1 tbsp. oregano
  • 1 tbsp. garlic powder
  • pepper to taste
  • sprinkle of crushed red pepper (optional but delicious)
Directions:
In a dutch oven, heat up the EVOO to saute your onion and garlic.

Once the onions are almost see through, Add your large can of whole tomatoes to the pot. stir around and push down on the tomatoes so they go from large chucks into a bunch of tiny ones.

Add half of the smaller can of tomatoes, but put the other half in a blender. All the basil, oregano, garlic powder, and pepper and blend until smooth.

Combine the pureed tomatoes to the marinara sauce and reduce to a simmer. Sprinkle some red pepper flakes into the sauce. Add in the tomato paste if you wish to have a thicker sauce. Allow the mixture to simmer for at least 30 minutes. Stir about every 5 minutes! Enjoy!

I used this to put over spinach roll ups! So delicious!
