Cauliflower Crust is a MUST!

So I LOVE pizza, but I HATE how full I get from it. My solution, a light cauliflower crust:



What you'll need:
Cauliflower (I used a full head)
Mozzarella cheese (I used about 3/4 of a cup)
1 egg
tablespoon of garlic
like 6 shakes of Italian seasoning

To make the crust you'll want to start by turning your cauliflower head into little pieces like rice. I put it in my ninja and it took a solid 8 seconds and it was perfect!


Once you have it like rice. You'll want to put it in the microwave for anywhere from 6-8 minutes. You will want it to be soft. I just covered mine with my overflow stopper that I use on the stove.

 

Once it is soft, you will want to squeeze all of the water out of it. I use 2 clean kitchen towels. The more water you get out, the better your crust it hold together.

I then add about 3/4 cup of mozzarella cheese. It's about 1 1/2 red containers if you are on the 21 Day Fix plan. 

I mix up 1 egg and a tablespoon of garlic together and add it to the cauliflower mixture.





For extra taste, I added some Italian seasoning. You could add whatever you wanted spice wise, but I love the combination that comes in the Italian seasoning blend so I just use that for convenience. Mix it all together so it is all blended. 

 

Spray the pizza pan you want to use with nonstick spray. I used coconut spray. 
 



Dump your cauliflower mixture on your pizza pan and press it out with your hands. Until it has an even thickeness



Bake at 450 for about 15 minutes. Remove from the oven and top with what ever you would like.


I put it back in the oven at 350 for about 10 minutes until the cheese is melted.
