I do love meatballs, but I'm not a fan of the grease. I'm always looking for ways to clean up my foods and then my success partner, Cheryl, turned me onto these beauties. I NEVER would have thought to switch ground turkey out for ground chicken.
Ingredients:
2 lbs. of ground chicken
1 cup of panko breadcrumbs
2 eggs beaten
1 garlic cloves, minced
Salt and pepper to taste
2 tablespoons fresh basil, chopped
1 cup of tomato sauce
Fresh mozzarella, cut into slices
Instructions:
Preheat oven to 375 degrees. Line a baking sheet with aluminum foil and set aside. In a large bowl add ground chicken, breadcrumbs, eggs, pepper, and basil. Mix with hands and form into meatballs.
Place meatballs on a baking sheet and brush with sauce.
Bake for about 12-15 minutes depending on the size of the meatballs.
Remove meatballs from oven and turn oven onto broiler setting. Top meatballs with mozzarella slices and broil for about 3 minutes or until cheese melts and slightly browns. Remove from oven and top with fresh chopped basil.
* Serve with brown rice and side salad (1 red, 1 green, 1 yellow, 1 blue)
