As many of you know who have been following my journey, I have had a bumpy end to my summer. My mom had her hip replaced in last June and everything was going fantastic! She managed to pop her hip out not once, but twice since her surgery. She has been put back to square one, not once, but twice. I spent a lot of time in emergency rooms and hospitals the week before school started and then my first week of school so I could be with her. A special THANK YOU goes to everyone who has sent me a message, prayed, and just gave us your love and support during the crazy times.
Then school took over. I had 2 major events that took place within the first month of school and those kids comes first. My health truly took a back seat. Maybe I should practice what I preach a little better, huh?
Well... I'M BACK. I'm going all in. I have been working on my meal plans all morning and I'm sitting here getting ready to kick off a new group. We are all struggling at some point in our lives. Sometimes it takes hitting rock bottom to scoop yourself up and get your crap together.
I truly need something that will push me. Today starts DAY 1 of my Clean Week and 21 Day Fix Mashup! I will be making a journey of my progress. I have a calendar prepared for my next two months that I plan to stick to.
I have received my Performance Line in the mail as of yesterday and I will be going all
out. I will be taking weekly pictures and I have planned myself a weekly
cheat meal for our date nights. As of now, I have a general plan that I tend to adjust as my week goes on. I work doubles on Tuesday so I maybe editing my Tuesday night, but that's completely okay!

I had a Hello Fresh meal was AH-MAZING! I seriously loved it so much, that I re-made it, but with my own little twists.
What you'll need:
1 onion
2 cloves of garlic
4 oz of grape tomatoes
small handful of thyme
1 TBSP of Tomato Paste
6 oz of ground hot sausage
6 oz of orzo
1/8 cup vegetable broth
1/2 cup of mozzarella cheese
1/4 cup of parmesan cheese
5 oz spinach
2 tsp EVOO
a stevia packet
salt & pepper to taste
How to make it:
Preheat oven to 400 degrees. In a large skillet, add some EVOO and then your diced onion and minced garlic. Cook, stirring, until softened, about 3 minutes. Season with salt and pepper.
While that is cooking, bring 2½ cups water to a boil in a large pot. Once it boils, add the vegetable oil and the orzo to cook.
Also, halve tomatoes lengthwise drizzle them with olive oil, salt, and pepper and place them face down on a baking sheet. Roast these in the oven for 10 minutes or until they begin to burst.
Once the onion is cooked and garlic is fragrant, add the thyme, tomato paste, stevia, and sausage. Break up meat into pieces with a spatula. Cook until the sausage is just starting to brown which is about 4-5 minutes.
Meanwhile, add the cooked orzo to pot with sausage mixture and stir to combine. Add the mozzarella, tomatoes, and half the Parmesan into pot. Lay spinach on top and mix it until it has cooked down to your liking.
Divide between bowls and sprinkle with remaining Parmesan and then enjoy! SOOOO simple. Takes maybe 30 minutes and it's done!
