Clean Popcorn Chicken

I'm all about the popcorn chicken, but not so much about how sick I get after I eat it… I never know what's actually in it. Solution: make your own (you didn't think I had a different solution did you!?) 

This is so simple. It took maybe 10 minutes to cut up the chicken and coat it with the breading. It will take about 30 minutes to cook them since you have to keep moving them around so they don't burn. Simple, right? I made a full pound of chicken so I'll be set for the week. 



What You'll Need: 

  • 1 cup almond flour
  • 2 Tablespoons of garlic powder
  • 1 teaspoon Mrs. Dash Southwest Chipotle
  • 1/2 teaspoon Himalayan Sea Salt
  • 1/2 teaspoon onion powder
  • 1 pound of chicken
  • 1 egg

How to Make the Chicken:
In a large mixing bowl combine all of your dry ingredients for the breading.




Cut your chicken into small cubes. First, dip the cubes into the egg wash then put them into the dry mix. Make sure to coat thoroughly. TIP: When moving the chicken, always use the same hand. Use a fork to pull the chicken out of the egg and a spoon to coat the chicken with the breading. Use your other hand to move the chicken from the coating to the pan. This way, your hands don't become completely covered in egg and bread.




To bake the nuggets, preheat the oven to 350 degrees, spray a large cookie sheet with a light dusting of coconut oil then place your traded nuggets on the pan. Bake for 25 min turning them every 5-7 min. Check to make sure there is no pink in the center of the chicken before eating.

*Portion Control --> 4-6 pieces (fill your red container) is equal to one red and 1/2 blue.
