So week 2 was MUCH easier than week 1. Like on a scale of 1-10, I'd say it was a 7. Now, I did have 3 cheats in there and some green tea. I had a small chi tea latte with almond milk, I have a veggie pizza with a super thin crust on Friday, and a little bit of cheese on Saturday. For the most part I have been sticking to my plan 99%. I have noticed that I'm not as hungry as I think I usually am. I'm eating until I'm full and then I'm done. Before, the reset, I would eat until my food is gone. Honestly, I'm not missing too much of it either.
A typical breakfast on week 2, and actually on week 3, is 3 cups of fruit. If you know my love for fruit, you know I'm beyond excited. For week 3, I'm not supposed to have a full scoop of Shakeology so I'm completely replacing it with a green apple and a cup of strawberries (except for Wednesday because i'll be on the go).
This would be my dinner plate AFTER I was full. I LOVED the rice and pinto beans, but I loved my zucchini and green beans more. The only Lindsay would have demolished the rice first, but I also would have covered it in butter and all that goodness. I am obsessed with that Pinto Bean recipe. It will definitely be resurfacing in the future for a meal plan or two! :) I must say that I have a new love for steamed zucchini, also. So many new dishes to add to my list for meal planning.
There is just something amazing about the simplicity of veggie stir-fry. Seriously, it is SO simple. I got this electric skillet for Christmas and it's perfect for stir-fry. My apartment is super tiny so whenever I cook anything, the smell lingers to swear, EVERYTHING! With this electric skillet, I can set it up next to a cracked window and my apartment doesn't reek afterwards.
Overall, I found that week 2 was much easier than week 1. My body adjusted to the lack of caffeine better and I can tell I'm sleeping better. I will come home after school and take a nap before I work later that night. The biggest spot that I can tell that I'm losing bloat is in my stomach. I have done before and after pictures each week and the amount of bloat that is gone is AMAZING. I try to stay off the scale generally because that doesn't really matter to me, but I have been weighing myself for before and after purposes. From the last two weeks, I am still at the same weight, but my before and afters pictures are night and day difference! :)
Week 3 should be an interesting week. I must say the food on week 2 was much more appealing to me, but I still get my fruit from breakfast and a snack, and I can still get in my salad fix for lunch. Dinner is mostly stir-fry veggies, garlic veggies, or a carrot salad. Wish me luck as I start the last week of this reset. I'm pleasantly pleased with my results so far and I'm excited to see them after the next week! I'm even MORE excited to be able to workout again!
